I've been sitting on some news for a few weeks and decided to go for it this morning!

I rarely eat any meat and have always loved the smell of chili and knew I would like it sans the meat, so I decided to experiment. The result was a yummy bowl of goodness! This recipe is pretty basic so you can add in lots of options if you like! I have made it with 2 medium sweet potatoes, cubed and tossed in and it was delicious! At just 211 calories per bowl, it's a favorite of mine!

Recipe:
2 cans of Dark red Kidney Beans, drained
2 cans of Pinto Beans, drained
4 cans of Petite Diced Tomatoes, DO NOT drain (I've used the petite diced with onions and they were fab also!)
1 pkg McCormick Chili seasoning (I've used Tex-mex and original, just depends on if you want that extra kick!)
Combine all
ingredients in a large pot. Heat to boiling. Reduce heat to medium and
simmer for 45 min-1 hour, or until beans are tender. Stir often to avoid
sticking. Serve alone, with cheese or Greek yogurt as sour cream. The
possibilities are endless. Makes 10 heaping bowls.

Welcome, welcome! I'm Amy, I'm a Christian, mother of 3, married to one
man! I am on a journey to a fit/healthier life for myself and my family. I have learned that changing your life is often more mental than physical. Believe you can and you're halfway there!
I started my fitness journey in February 2013 when I
purchased a treadmill to 'walk' on! I have since discovered I am a
runner! I still have to walk some but I RUN! I try to do a variety of
exercises to tone and shape my whole body, with 105 lbs to lose when I
started, it is needed! I have changed my eating habits and my whole family now eats cleaner! I live by the motto " Know your limits, then defy them!"!
To date I have lost 74+ lbs and 93.5 inches. I don't have an exact lb lost because in February 2013 when I stepped on my scale it wouldn't weigh me. It had a 325 lb limit. Talk about a wake-up call! What I have gained is much more than what I've lost. I have self-confidence and an inner strength I didn't know I possessed. I know it comes from the Lord because if you had told me a year ago that I would be a runner and training for my first half marathon, I would of laughed in your face. I'm excited to see how far I have come and will go. I strive to let the Lord use me for His purpose. I'm finding out who I am supposed to be and it brings a peace I've never known.
I started a Facebook page at my 6 month 'fitversary' because I had
several people tell me I am inspiring- I thought yeah right! But then I
started to realize that everyone needs a little motivation and
encouragement, if sharing my story could inspire then what the hey! So
that's what my page and blog is about- my journey, faith, motivation &
inspiration! I am nothing without Christ! I encourage you all to invite
him into your heart and life, you won't be sorry!
