I rarely eat any meat and have always loved the smell of chili and knew I would like it sans the meat, so I decided to experiment. The result was a yummy bowl of goodness! This recipe is pretty basic so you can add in lots of options if you like! I have made it with 2 medium sweet potatoes, cubed and tossed in and it was delicious! At just 211 calories per bowl, it's a favorite of mine!

Recipe:
2 cans of Dark red Kidney Beans, drained
2 cans of Pinto Beans, drained
4 cans of Petite Diced Tomatoes, DO NOT drain (I've used the petite diced with onions and they were fab also!)
1 pkg McCormick Chili seasoning (I've used Tex-mex and original, just depends on if you want that extra kick!)
Combine all ingredients in a large pot. Heat to boiling. Reduce heat to medium and simmer for 45 min-1 hour, or until beans are tender. Stir often to avoid sticking. Serve alone, with cheese or Greek yogurt as sour cream. The possibilities are endless. Makes 10 heaping bowls.
